SPACE FOOD - READY to "LUNCH".
Taste, Colour, Packaging and Preservation. The best taste in space.
An Italian Chef, working with Argotec and under our supervision, completed the design, test, and production of a 5-dish Space Food
menu as contracted by the European Space Agency.
Argotec, in charge of the European bonus food for European astronauts, and with its knowledge of NASA standards and requirements, has backed the entire and defined process, following the product management, the research and the packaging, while the operational stage and the production was conducted by Chef David Scabin.
The outcome of these products is a result of activities on research and development that lasted 1 and half years. The main goal of this study was to lower the amount of sodium content in food and adapt a method of preservation that would not alter the colour, fragrance and flavour of food. Simply, create a healthy product that would also boost the astronauts psychologically.
To eliminate bacterial pathogens, classic and traditional method of freeze-dried and thermo stabilization was applied, but with scientific calibration tests on parameters process and a perfect balance of ingredients made it possible to comply with the organoleptic and nutritional quality of the food.
Research activities have proceeded wonderfully producing amazing results. Approximately 15 Space-dishes of varying flavors, textures, and nutritional content have been successfully tested, while at the same time enhancing and re-adapting different preservation methods which can be used in future food preparation.
Following up are some innovations over the existing products:
- 100% organic;
- Free salt;
- 36 months of certified shelf life ( despite the total absence of food preservatives);
- Creation of European freeze-dried Space Food ( for the first time in Europe, adopting the NASA standards);
- Space Packaging for freeze-dried food, following the given NASA standards.
Following the success of this project, ESA contracted Argotec as the unique European responsible
of the space food development and supply for the European astronuats on the ISS. Argotec will act on behalf of ESA as an interface to NASA and the European food suppliers.
Furthermore in September 2012 Argotec provided the Space Food for the Caves
The same food produced for the Luca Parmitano's mission Volare
has been supplied to the six astronauts
participating to the Caves Training.
The crewmembers, coming from USA, Russia, Japan, Canada and Europe, were amazed by the quality and tasting of the space food.
